Chinese Egg & Chive “Pancakes”

I asked my mom (aka MamaWon) to buy me some chives from Chinatown and she brought me enough to feed all the hard core Justin Beliebers from around the world.

I attempted to make a traditional egg & chive “pancake” recipe; white people call these “omelettes” haha. Warning: I have no freakin idea what goes into the traditional recipe. So I made mine up.

Chives & Eggs

I chopped the chives into 1 inch-1.5 inch pieces and used about 2.5 eggs per “pancake”

Added garlic pow, sea salt + pepper, mix.

Pan fry. Flip. Etc. I used EVOO. I typically only pan-fry food in coconut oil but didn’t want a coconut smell/taste in this particular dish.
