Rotisserie Chicken, Chive & Tomato Stirfry

Often times my best dishes are made by accident or with leftover ingredients I’m trying to get rid of. This is one of those times.

Had almost a whole rotisserie chicken that no one touched & ANOTHER gigantic bunch of chives to get rid of. I de-skinned and shredded the chicken meat (pulled the meat off with my hands), chopped the chives into small pieces and threw in chunks of tomato with tomato paste & water to make a tomato-y sauce-y dish.

This was a really simple dish. I’m lazy as hell so whatever I could do that doesn’t take that much mental work, I’m down. My brain is lazy too.. :)
