Ya know those moments you just want to stick your head into a bag of Wonder Bread? Stuff 3 PB&J’s into your mouth at once? Or order a whole pizza and 17 sides of garlic bread just for yourself? No..? Just me? Okay.. well sometimes I have really strong carby-bready craving days and I just plain miss that texture. I’m not a huge baker (or a baker at all) so I don’t have paleo-friendly bread, muffins or buns laying around, ever. My craving was really strong – strong enough to send me to Pinterest & start trolling for some kind of paleo-friendly bready recipe. I just bought blueberries so this recipe for blueberry-coconut biscuits jumped right out and slapped me in the face.

I like how simple the ingredients were in this recipe:
- coconut flour
- ground flax seeds
- unsweetened coconut
- coconut oil
- baking soda
- sea salt
They tasted great by itself, slathered with a little ghee and served cold after being kept in the fridge! I don’t know if people like that but I dig it.
