I had a few deliveries today! One of my best friends, Tony (he’s the idiot who did the “Pharmacy Style” video that went viral on Youtube – which is a Gangnam Style parody), sent me some belated birthday gifts. He’s really great at playing guitar and loves that I’ve gotten into it too. (I’m not so great at it, YET). So he sent me some guitar accessories! I now have a soft guitar case (for easy traveling), a guitar strap (so that I can walk around with the guitar hanging off my back and pick up chicks), and a guitar stand (because lazy). I knew there was a reason I kept that guy around.
By the way, my Snapchat is “catwon” if you want to view several hundred videos and photos of my dog along with a selfie-log of how many days it’s been since I last washed my hair. You think I’m kidding? Okay…
This may seem boring to you but I’ve been making this really good massaged kale & arugula salad for lunch. My go-to packed lunch is usually a really green salad with chitties, maybe some quinoa, avo, cukes & tomatoes, all topped with some hemp seeds for a nutty flavor. I’ve been using Tessemae’s dressing instead of my usual olive oil, balsamic & horseradish mustard combo. No complaints so far.
PROSCIUTTO WRAPPED EGG MUFFINS RECIPE
SURPRISE! Another egg muffin recipe. Are you sick of these yet? Highly doubtful.
I made these very quickly in a late-night attempt to do some food (breakfast) prep for the upcoming week. I forgot to thaw my sugar-free bacon and I didn’t feel like peeling or slicing up a sweet potato like I usually include in my #eggmuffs. However, this lazy version of an eggmuff still came out pretty damn good.
- Coconut oil or ghee
- 1 pack of Trader Joe’s prosciutto (ingredients are pork & salt only)
- 12 eggs
- Baby spinach
- Diary-free pesto
- Black pepper
- Trader Joe’s Everyday Seasoning and/or African Smoke seasoning
- Spray muffin tins with your oil or rub with melted ghee
- Line the sides and bottom of the muffin tins with prosciutto pieces (I tore them with my hands & it made uneven pieces but if you’re fancy you can use a knife, I guess, Beyonce).
- Pack each cup with raw baby spinach
- Drop a whole raw egg into each cup
- Drop a small dollop of pesto onto each egg
- Sprinkle with black pepper & either of the TJ’s seasonings. I usually do half Everyday Seasoning and half African Smoke
- Bake for 22 min at 350 degrees
*Note, no need to add salt to these because the prosciutto is pretty damn salty on its own. At least you know you won’t be under seasoning these babies.
** I get a lot of people telling me they hate baking egg anything because their muffin tins always stick and are hard to clean. I have a Calphalon brand, 12 muffin nonstick baking pan. I’m not sure if that’s the exact model but I linked it in case you want to give it a try. My #eggmuffs come right out and it’s easy to clean.
I pack these #eggmuffs up for breakfast every day. I had three this morning and you can bet I’ll have 3 tomorrow morning too. They’re just so easy and convenient. Definitely one of my favorite things to make!
